Sinols Criança 2004

SINOLS: Name of a lineage of Norman origin dating back to the 10th century. It defines the mountains of Roses that buttress the Cap de Creus massif, from which the vines that give this wine its character can be descried.

Production: Grapes hand-picked at phenolic ripeness. Yield approximately 50 hl/ha. The wine is made from 30% Garnatxa, 30% Carinyena and 40% Cabernet Sauvignon, completely separated from the stalk and devatted by 20%. Pre-maceration at low temperature for three days. 21 days' alcoholic fermentation at a temperature below 28 ºC, followed by malolactic fermentation and nine months' resting in casks of American and French oak. Coupage of the best casks.

Tasting note : Intense cherry-ruby colour. Complex, harmonious aromas of cask ageing. Well-structured, full in the mouth and with long persistence, rich in perfectly-integrated tannins. Powerful retronasal presence.

Gastronomy : Ideal accompaniment for meat dishes, roasts, casseroles, stews, and cured and semi-cured cheeses. It is also an invitation to discover interesting new combinations with the immense variety of dishes of Mediterranean cuisine.
