Sinols Rosat 2007
SINOLS: Name of a lineage of Norman origin dating back to the 10th century. It defines the mountains of Roses that buttress the Cap de Creus massif, from which the vines that give this wine its character can be descried.
Production : Grapes harvested throughout the month of September, when each variety reaches phenolic ripening. Yield approximately 50 hl/ha. Combination of the varieties Garnatxa (40%) and Carinyena (30%), with a small proportion of Cabernet Sauvignon, Shiraz , Merlot and Ull de Llebre, all prepared separately. The grapes are destalked and cold-macerated for at least 48 hours, and then, depending on the results of tasting, the moment is chosen to devat the free-run must. Alcoholic fermentation lasts approximately 21 days at a temperature below 16 ºC.
Tasting note : Attractive pale red colour. Clean aromas of red fruits, notably wild strawberries and cherries. An intense, warm flavour that, thanks to the maceration of the ripe grapes, has a full, dense, pleasant and persistent finish.
Gastronomy : Perfectly accompanies pasta, pulses, rice dishes, vegetables, hors d'oeuvres, white meats and fresh and semi-cured cheeses. In addition, its marked personality enables it to combine with dishes of traditional Mediterranean cooking that are customarily reserved for red wines. |
