Sinols Blanc fermentat en bota 2003
SINOLS: Name of a lineage of Norman origin dating back to the 10th century. It defines the mountains of Roses that buttress the Cap de Creus massif, from which the vines that give this wine its character can be descried.
Production: Garnatxa Blanca and Macabeu grapes hand-picked from our vines of over 40 years of age, harvested in the second week of September when they reach full ripening. Yield of 45 hl/ha. 12 hours' cold maceration. Fermentation over the lees in new casks of French and American oak at a temperature below 18 ºC, where they rest for four months. Coupage of the best casks.
Tasting note : Yellow colour with delicate golden highlights. Delicious, intense aroma of stewed fruits, dates, white flowers and honey with touches of vanilla and smoked fish . Intense, creamy flavour, with good acidity and aromatic persistence, and tones of salted butter and yeast.
Gastronomy : Ideal accompaniment for fish dishes, seafood, soups, creams, white and smoked fish , and semi-cured, cured and creamy cheeses. It is also an invitation to discover interesting new combinations with the immense variety of dishes of Mediterranean cuisine. |
