Sinols Negre 2007

SINOLS: Name of a lineage of Norman origin dating back to the 10th century. It defines the mountains of Roses that buttress the Cap de Creus massif, from which the vines that give this wine its character can be descried.

Production : Grapes harvested during the month of September, when each variety reaches phenolic ripening. Yield approximately 50 hl/ha. Made mainly with the varieties Garnatxa (40%) and Carinyena (40%), but also with a small proportion of Shiraz , Merlot and Ull de Llebre. After destalking, the grapes are macerated and then fermented at a temperature of 28 ºC for 15 days before proceeding to malolactic fermentation.

Tasting note : Intense red colour with purple and lilac highlights. Powerful aromas of fruits and spices: blackberry, plum, liquorice, vanilla, coconut, menthol and toffee. In the mouth it is full and well-rounded, with pleasant tannins. It has a full, dense, pleasant and persistent finish.

Gastronomy : Ideal for accompanying meat dishes, blue fish, sea urchins, casseroles or semi-cured cheeses.
