Sinols Blanc 2007

SINOLS: Name of a lineage of Norman origin dating back to the 10th century. It defines the mountains of Roses that buttress the Cap de Creus massif, from which the vines that give this wine its character can be descried.

Production : A wine made with grapes hand-picked at the ideal moment of ripeness. The varieties used are Garnatxa Blanca and Macabeu from low-yield vines (55 hl/ha). After pressing, the free-run must is extracted and fermented at a controlled temperature of 16 ºC.

Tasting note : Yellow colour with delicate green highlights. In the nose it displays clean, fresh, fruity aromas: lemon pear, apple, banana and green peach. Sweet, creamy reminiscences. Intense, smooth, pleasant flavour with good acidity that makes it luscious and persistent. Aroma in the mouth and aftertaste in tune with the first aromas detected.

Gastronomy : A fine accompaniment for fish and seafood dishes, cold creams, smoked fish , mild white meats, fresh and semi-cured cheeses. Ideal for drinking at any time of day.
