Sinols Garnatxa
SINOLS: Name of a lineage of Norman origin dating back to the 10th century. It defines the mountains of Roses that buttress the Cap de Creus massif, from which the vines that give this wine its character can be descried.
Production : A natural sweet wine made with very ripe grapes of Lledoner Roig (Garnatxa Roja) from vines over 50 years old. After destalking, they are macerated at very low temperature to allow alcoholic fermentation to begin slowly. This process is halted at 15 degrees by adding vinic alcohol. Finally, a geing by means of the 'solera' system in casks of different woods (acacia, cherry, chestnut and oak) give the wine its definitive personality.
Tasting note : Brick red colour with golden honey highlights. In the nose it displays aromas of fresh, dried, stewed or cooked fruits: quince, caramel, jam and also spices (vanilla and cinnamon). On the palate it confirms and distinguishes the flavours of the different aromas detected. An intense, persistent, full-flavoured, sweet and natural aftertaste.
Gastronomy: Rediscover the pleasure of a good natural sweet wine. It combines with desserts, both traditional (dried fruits and nuts, fruit salad, pastries, biscuits, etc.) and more novel (chocolate coulis, quince jam, apple tatin , etc.) You can also enjoy this wine at a cooler temperature as an excellent apéritif. |
