Sinols Moscatell 2007

SINOLS: Name of a lineage of Norman origin dating back to the 10th century. It defines the mountains of Roses that buttress the Cap de Creus massif, from which the vines that give this wine its character can be descried.

Production : A natural sweet wine made with Alexandria muscat grapes harvested very late (mid-October). After destalking, they are macerated at very low temperature to allow alcoholic fermentation to begin slowly. This process is then halted at 15 degrees by adding a little spirit.

Tasting note : Yellow colour with lemon highlights. Notable aromas of white flowers and roses with delicate notes of citrus fruits, honey and spices. A rounded, velvety flavour, smooth and sweet but never cloying. Well-structured and with good balance between acidity and sweetness, helping to create a very long persistence of flavours perfectly blended with the first aromas detected in the nose.

Gastronomy : This sweet wine has various possibilities, in both the traditional line (dried fruits and nuts, biscuits, pastries) and the avant-garde of gastronomy (foies, blue cheeses, etc.).
