Sinols Antima 2004

SINOLS: Name of a lineage of Norman origin dating back to the 10th century. It defines the mountains of Roses that buttress the Cap de Creus massif, from which the vines that give this wine its character can be descried.

Production : Carefully-selected grapes hand-picked at the moment of optimal phenolic ripeness in our oldest vineyards of Carinyena and Garnatxa, the indigenous varieties of the Empordà. Destalked and devatted by 20%. Pre-maceration at low temperature for three days. 30 days' maceration-fermentation at a temperature not exceeding 28 ºC, with regular pumping-over and delestage. Malolactic fermentation in new casks of French oak, with bâtonnage . The wine then rests in the casks for 12 months, and finally it ages in the bottle.

Tasting note : Intense cherry red colour with maroon highlights in the rim. A powerful aroma of underbrush tones, truffles, jam, oyster mushrooms, compote and liquorice. In the mouth it is highly concentrated, intense and flavourful, with very long persistence, with tones of caramel and syrup. A long, intense, flavourful aftertaste.

Gastronomy : Ideal accompaniment for meat dishes, roasts, game, and cured and semi-cured cheeses. It is also an invitation to discover interesting new combinations with the immense variety of dishes of Mediterranean cuisine.
