Sinols Reserva 2001
SINOLS: Name of a lineage of Norman origin dating back to the 10th century. It defines the mountains of Roses that buttress the Cap de Creus massif, from which the vines that give this wine its character can be descried.
Production: Grapes from vineyards with very small production (50 hl/ha) and hand-picked at the moment of optimal ripeness. The wine consists of 50% Cabernet Sauvignon, 25% Garnatxa and 25% Carinyena. Destalking, maceration and alcoholic fermentation for 21 days at a temperature of 28 ºC and malolactic fermentation. Finally the wine rests in new casks of French oak for 12 months.
Tasting note : Intense red colour with marked brick tones. An intense, powerful, complex bouquet and aroma of damp forest vegetation with notes of cocoa, menthol, balsam and hints of roasted pepper. Violet and vanilla, camouflaged with tones of soot, black olives and liquorice. On the palate the wine is powerful and well-rounded, with an aroma in the mouth in tune with the first olfactive phase, with well-rounded, pleasant, persistent tannins. The aftertaste carries notes of spices added by the French oak and the maturing of the wine, and has very good aromatic persistence thanks to its good total acidity and concentration.
Gastronomy : Ideal accompaniment for meat dishes, roasts and cured and semi-cured cheeses. It is also an invitation to discover interesting new combinations with the immense variety of dishes of Mediterranean cuisine. |
