Oli de Pau - Extra Virgin Olive Oil

Obtained exclusively from olives grown in the Empordà region, with centuries-old olive trees as the basis of its production. There are two varieties of olive trees that are found only in the Empordà region – the Argudell and the Corivell – which, together with the region’s characteristic climatic trait, the strong north wind or Tramuntana, give the product its distinguished character.

PRODUCTION: The process begins at the olive tree, with a rigorous, environment-friendly phytosanitary examination of the olive. After careful picking, the best olives are selected to go into this oil.
All olives are of the Argudell variety, which is unique to the Empordà region, and which give the oil its distinctive personality.
The selected olives are ground on the same day they are picked using the most modern methods, obtaining the first cold pressed oil (25 ºC), with the utmost care and respect for its organoleptic characteristics.

ANALYSIS: 0.5º maximum acidity.
